Alcoholic beverage, we want to tell, in Sweden has been dubbed the “shit beer” or “bajsöl”. It boiled at the brewery, Nya Carnegie, it’s called PU:REST, and this is the first beer in Sweden, two-thirds of the wastewater. Very brave of you.
The idea of PU:the REST came from Swedish researchers. Realized it was the forces of the New Carnegie Breweries and Carlsberg Sweden, and IVL, Swedish environmental research Institute. IVL asked the New Carnegie brewery, which is owned by Carlsberg and Brooklyn Brewery to create a beer out of the water processed at the nearest station of water treatment, Hammarby.
Chris Torgeson, head brewer of New Carnegie, said that to create a beer was not so easy. They decided to brew Pilsner, and this variety is notable for its purity in taste. However, he admits that, as a representative of the food industry it needs to start thinking differently in order to care for the earth’s resources.
Apparently, the initiative is linked with the new environmental programme Carlsberg “Together Towards Zero”. One part of this program is to reduce the consumption of company water by half by 2030.
For the first time PU:REST tried may 25 at the signature restaurant of the brewery is New Carnegie Sestate on Hammarby in Stockholm. The drink will also be available this summer in limited quantities in the shops of Systembolaget, at some festivals and in selected bars.
